Add an Init Container and a Sidecar

The invoice-pdf Deployment in namespace vendors writes its logs to files under /srv/logs, and they are lost whenever a Pod is replaced. The team wants a log-shipping sidecar reading the same files, and the log directory prepared before the application starts.
